Tigernuts and sweet potato based granola

 

Ingredients

 

500 g sweet potatoes

100 g Yungas coarse ground peeled Tigernuts crumbs

30 g Yungas peeled Tigernuts tubers

100 g coconut flakes

100 g dried cranberries

1 apple

30 g coconut oil

2 tbs. honey

2-3 teaspoonful cinnamon

half teaspoonful salt

Chop the sweet potatoes into small pieces in a food processor. Mash the apple to get puree. Mix all the ingredients of the granola. Spread the mixture on a sheet covered with baking paper. Dry the mixture for 45-60 minutes in the oven heated to 150 degrees. Stir the mixture every 10-15 minutes so that the bottom does not stay wet and the top does not burn.
