Scones with Tigernuts and pork rind (pork crackling)

 

Ingredients:

 

200 g minced pork rind (crackling)

250 g peeled Tigernuts flour

50 g tapioca flour

1 egg

200 g Totu cream extra

50 ml water

30-50 g grated Parmesan cheese

ground black pepper

salt

For the top of the scones:

1 beaten egg

1 tbs. grated Parmesan cheese

It is very simple to make. Knead all the ingredients. Then roll the dough until it is 1.5-2 cm thin. Cut scones with a 3-4 cm wide biscuit cutter. Place them on a sheet covered with baking paper. Brush the top with the egg and sprinkle them with the cheese. Preheat the oven to 175 degrees and bake them for 20 minutes.
