The Yungas and Elemimózsia flour mixes only contain milled roots and tubers. They contain neither cereal flours not coconut flour. They are special because they make excellently rolling pastry without adding eggs to them. The sweet flour mix has the natural sugar content of the skinned Tigernuts so it can be used without adding sugar. The sweet flour mix is very simple to use. They are suitable for making biscuits, shortcrust pastry and macaroon etc.

Contents: Skinned Tigernuts flour, manioc (cassava) flour, Malanga root flour, baking soda and salt.


Cinnamon biscuit

Add 40 grams of natural sweetener (erythritol, honey or date syrup) to 150 grams of Sweet flour mix. Then add 50 grams of liquid coconut fat, 30 grams of water and half a teaspoonful of cinnamon. Knead the dough until it is homogeneous. Preheat the oven to 180 degrees. Roll the dough between two silicone baking papers (skilled cooks do not need it) until it is thin. The thinner it is, the crispier it becomes. Put the rolled dough onto a sheet covered with silicone baking paper. Turn the oven to 160 degrees and bake for 15 – 20 minutes. Leave it cool after taking it out of the oven. Then it is ready to be served.
