Parmesan coated snacks
Ingredients:
600 g chicken breast or pork tenderloins or chine
2 eggs
100 g peeled Tigernuts crumbs
50 g Parmesan cheese
ground black peppers
salt
2-3 tbs. coconut oil
Cut the meat into finger sized pieces. Season them with salt and pepper. Grate the cheese and mix it with the Tigernuts crumbs. Grease a casserole dish with a little oil. Dip the meat into the beaten eggs first then into the parmesan mixture. Put the coated meat pieces into the dish. Preheat the oven to 200 degrees. Fry the meat for 18-20 minutes until they become goldish-brown. Turn the meat when half cooked.
